This easy to make, hearty soup is not only tasty but vegan AND oil-free as well.

Ingredients

2 cups split peas, rinsed

6 cups vegetable broth, preferably homemade

1 large yellow onion, chopped

4-6 cloves garlic, minced

3 large carrots, large dice

2 ribs celery, chopped

1 bay leaf

1 teaspoon smoked paprika

1 teaspoon basil

1 teaspoon thyme

2 tablespoons nutritional yeast

¼ teaspoon cayenne pepper

1 teaspoon Himalayan pink salt or sea salt

2 sprigs parsley, optional
