Brittany suggests composting the peelings/scraps from the veggies and that’s a great idea.
Another thing you can do with the scraps is to save up all your peelings and scraps until you have enough to make your own vegetable broth. And, yes, you can make your vegetable broth in your Instant Pot, too!
